This washed Parainema was sourced through Finca Terrerito. Leticia Lopez Hutchins, a 5th generation coffee farmer, provides us with this lovely washed coffee out of Cartagua, Honduras. Off brew this coffee is nutty and sweet, with vanilla and stone fruit opening up as it cools. The mouthfeel and finish are plummy and syrupy, perfect for everyday drinking.
Leticia Lopez Hutchins bought some cattle land and transformed it into Finca la Unica, a farm that produces delicious microlots. Along with the farm, she is making a way for more women to be highlighted in the coffee industry. She uses her position to build housing and provide clean water to the area, along with some other gorgeous plants growing cocao and lemons.
Roasting this coffee was similar to other washed coffees I have roasted, however, I wanted it to drop a little earlier to provide a sweeter finish. Going from max gas in the beginning, to cutting the gas shortly after first crack to extend the development. This coffee has a lovely body and sweetness, making both great espresso and drip.
