Sourcing decaf is interesting. We can go the route of getting another plain and flavorless decaf, or source one that still lets the cultivar show. Elias and Shady Bayter thought the same thing when producing this coffee. The ethyl acetate, a derivative from sugar cane, is a safe and chemical free decaffeination process that preserves the fruitiness in the cup. Enjoy as a drip or espresso!
