This extended natural is one of Luis' most extensive editions. This coffee represents his dedication to perfecting and providing the best flavor his farm and trees can provide. This controlled fermentation starts by picking ripe cherries and sorting them. The cherries then go through a 5 day anaerobic fermentation to deepen the sweetness and increase the intensity of the body. After the fermentation, Luis slowly dries the cherry for between 20-25 days to stabilize the coffee.
This meticulous process provides one of the more unique cups I have experienced. With high intensity like cocoa and ripe plum, the sweetness and structure are consistent throughout. My favorite part is the texture, it is so soft and creamy, reminding me of marshmallow and nougat.
Roasting this coffee was a little challenging but repeatable. I charged at a lower temperature and hit it with max gas. For the filter, I soaked it for thirty seconds to elongate my drying and mid phase. The espresso I immediately ramped up the heat to extend the development after 1st crack.
