This is one of the best coffees we have bought from Luis. This Red Bourbon exemplifies how the impact of both coffee quality and controlled fermentation in the cup. Luis harvests his bourbon at peak ripeness, before anaerobically fermenting the coffee with lactobacillus cultures. The reasons for this are two main outcomes: less defects in the coffee; and a riper flavor in the cup. With this intense and complex profile, we were also able to experience a much silkier tactile experience.
Now the caveat is that we only have about 24 pounds of this coffee, so there isn't much to go around for this lot. That said, it makes it that much more special with the detail and outcome that was produced. Luis takes great pride in his quality, and New School always wants to showcase his dedication to his craft.
