Origin: Fazenda Penha, Nova Resende, Minas Gerais, Brazil

Process: Anaerobic Natural

Altitude: 1250masl

Variety: Yellow Cataui

 

Notes: Lots of strawberry and cream, with a rosewater mouthfeel and sweet almond finish. This coffee is still a great Brazilian coffee, with more complexity than other lots from the farm.

 

Roasting natural and extended naturals is always a nice time, they react (typically) well with heat adjustments. This coffee was no exception, I was able to adjust each phase of the roast to emphasize the fruit and florals that aren't always common from Brazil. The espresso and filter are dropped at the same temperature, with different developments to highlight those notes on espresso. 

 

About the Madeira Family:

I met Julia Madeira a few years ago when her and her mother were getting ready to start their own exporting company. I was very happy to be an initial partner in the Savannah area, and am happy to be working with them again. They inherited [Julia's] father's farm after his passing, and started implementing better farming practices to increase their stake in specialty coffee. In the two years of knowing the, the cup quality has steadily increased. The lot we bought from we call, "Feliz Acidente", a fun name for a fun story. When meeting with Julia this past year, I mentioned that I would pay a lot to buy her experimental coffees. It can be hard to put aside coffee for experimentation, a risk. This lot, however, was picked and put in a truck that broke down on the farm. For three days it sat, fermenting the coffee. When she sat down with me, she mentioned that the outcome was very surprising, and when I cupped it I knew it was too. This coffee was sweet, vibrant, and layered. I am happy to be working with the Madeira Family again, and even with happy accidents I still wanted to continue our relationship.
